You will work with our accomplished chefs in this hands-on experience, starting at the colourful stalls of Florence's historic food market, through to our celebration together around the table with a toast. This is an authentic way to connect with others while learning to cook based on traditional methods and ingredients. This class will help you develop your abilities to use these techniques, from rolling up your sleeves to sampling what you create. The basis of the class is to understand how much Italian culinary arts can tell us about what Italians consider "food". What we enjoy eating, how food brings people together and why the customs surrounding food have made the Italian way of cooking one of the most respected methods of cuisine throughout the world now recognized by the UN as Intangible Cultural Heritage.

The Central Market is one of Florence's most historic locations and the center for purchasing all the goods needed every day in Italian culture, known as the "spesa." While there you'll see all the wonderful colors and aromas of the many seasonal fruits and vegetables used in our cuisine enjoyed by the world. Discuss the best cut of meat with the butcher, or the best way to select ripe tomatoes from the greengrocer, then experience authentic tastings of local foods made in the area as you explore each vendor with your group. Learn that the essence of UNESCO world heritage protected Italian cuisine is not only based on recipes, but also on the quality of the ingredients and the commitment of those who grow them. You will feel this energy during this fun, sensory experience before you go home to prepare your meals with the flavours of what you have experienced.

Prepare the Culinary Classic: Nonna's Sunday Lasagna

You're about to embark on an amazing culinary adventure! At the start of your journey, the delicious smell of ragù cooking on the stovetop will fill your kitchen with the familiar aroma of an Italian family Sunday dinner. You're not just cooking; you're perfecting the skills and celebrating the time-honored traditions of Italian cooking. You'll be making Nonna’s legendary Sunday Lasagna and authentic tiramisú. Your instructor is a master chef who will teach you every aspect of preparing these dishes in a hands-on environment, step-by-step, while sharing the many generations of love that has gone into perfecting these recipes. You'll be kneading dough, layering a creamy béchamel sauce, and assembling a lasagna in the way Nonna made it. When your lasagna has finished baking to perfection in its golden crust, you will finish off your meal by dipping ladyfingers into a rich espresso and whipping mascarpone into a light and fluffy cream. Thanks to the guidance of our chefs, simple ingredients become exquisite dishes that express family tradition and the Italian cultural heritage that makes Italy famous throughout the world.

Gather Around the Family Table: A Celebration of Wine, Joy, and Heritage

The last part of this experience takes place at the dinner table, much like a Sunday meal at your grandmother's house. You'll share treasured moments over dinner with a small group and enjoy a meal that you have made from scratch. You'll clink glasses filled with Chianti to tell stories, creating a warm and inviting atmosphere filled with laughter and life. You will enjoy the lasagna you created, paired perfectly with Chianti. The cocoa-dusted tiramisù you made will be the finishing touch to your meal. After that, you'll celebrate with a graduation "toast" and receive an official certificate that you can display proudly. The experience continues through the digital recipe booklet you'll receive, which will allow you to recreate the same Italian recipes you prepared, so you can experience your grandmother at home for years to come. The meeting point is in our Cooking School in the heart of Florence, via Panicale 43r, close to the Central Market.

To remember

  1. WE REGRET TO INFORM YOU THAT THIS TOUR IS NOT SUITABLE FOR CELIACS.
  2. Please inform us of any food intolerance or allergy in advance.
  3. Please let us know in advance any special need or impaired mobility of the clients and we will do our best to accomodate them.
  4. Please note that when the Central Market is closed (on Sundays and bank holidays) a special introduction and extra tastings at the cooking class location will substitute instead.
  5. Tour will end at our cooking school in San Lorenzo district (Via Panicale, 43R) Please note that starting from March 1st 2026, the pasta-shapes making activity will be replaced by: Preparation of your own Nonna’s Lasagna: an authentic hands-on experience where you will create your own lasagna from scratch, with fresh handmade pasta, slow-cooked Bolognese ragù, and creamy béchamel.
  6. The full meal will include your own Lasagna and Tiramisù accompanied by a curated selection of Tuscan wines and 1 dessert wine.
